Carwyn Adams' family farm in Carmarthenshire, South West Wales, draws on a family tradition of cheesemaking going back six generations.

Carwyn’s mother, Thelma, began making cheese in 1984, when milk quotas jeopardised the future of the farm that she and her husband, Gwynfor, ran together. She started on a small scale, making the same Caerffili that her mother and grandmothers had made before her; a true Caerffili, moist and crumbly in texture and bright and fresh in flavor. Her skill was soon noticed and she quickly established a reputation as the reviver of traditional Caerffili, helping to start a renaissance in Welsh cheesemaking.

    Smooth, supple and buttery. Pungent from a cider wash. In the pantheon of creations born through chance, count this cheese alongside penicillin and the slinky. Carwyn Adams found an orange culture growing on a Caerffili and developed it, and a new cheese was born.

    Soft and yielding, with a creamy flavor. The cheese of choice for Admiral Lord Nelson and his family, having frequent references in their correspondence. The original recipe recommended using a feather to apply salt to the surface.

    A soft caramel colour, and a creamy and nutty flavor. Hand-made close to us with milk from the farm’s herd and originally named Beauty of Bath. We suggested ‘Wyfe of Bath’ because, in Chaucer’s Canterbury Tales, the Wyfe had an insatiable appetite for pleasure.

    A balanced fruity and savory flavor. Curds from the Wyfe of Bath are pressed, and then washed in cider produced by Graham Padfield from the apples grown in orchards on the family farm.
